My family farm in Elgin, Quebec, provides the

ideal location for my craft oil mill. This is

where I make organic cold-pressed oils using

only high quality grains and a method of slow

pressing to extract the best from oil seeds.

Les Saveurs d’Elgin as they are a result of

organic farming in Quebec.

 

Hermine Dressing (maple)

200 ml maple syrup

200 ml balsamic vinegar

2 tbs Dijon mustard

600 ml canola oil Saveurs d’Elgin

1 tbs Meaux mustard

1 ts dried tarragon

Combine ingredients one after the other.  Keep refrigerated.  Lasts up to 2 weeks

Cassidy Dressing (raspberry)

200 ml raspberry vinegar

600 ml huile de canola Saveurs d’Elgin

2 c.s. moutarde de Dijon

Combine ingredients one after the other.  Keep refrigerated.  Lasts up to 2 weeks
 

Ruban Bleu Dressing (goat cheese)

150 g green onions

150 g Ecu cheese

200 ml cider vinegar

2 tbs Dijon mustard

2 tbs honey

600 ml canola oil Saveurs d’Elgin

Combine ingredients one after the other.  Keep refrigerated.  Lasts up to 2 weeks.
