I am so pleased to have joined up with Les Fermes Valens to present this great recipe. Making delicious food is easy when you have beautiful local ingredients to work with.
This hearty stew is chock full of seasonal vegetables, including bright green kale to vamp up its nutrition. We made the base of the stew with Valens' gut-healing bone broth. The fresh ginger, curry, apple and coconut milk bring the dish together and will delight your taste buds.
Pair this meal with some naturally fermented sauerkraut to support digestion, toss up a fresh green salad and voilà, supper is ready. Who says healthy food can't be fast and delicious?
